I would have to agree with you that a much more varied diet would be much more likely to satisfy all our nutritional needs than a diet of potatoes and milk alone, and would certainly be much less boring. Besides, as I understand it, there is another reason for varying one's diet besides ensuring that we get all the nutrients we need. Virtually every food available to us, however healthy, contains some kind of toxin or other, though usually minute in quantity, that is not good for us. By varying our diets, we minimize the probability of accumulating enough of any one of those toxins in our bodies to seriously damage our health. In the case of potatoes, solanin could be one of those toxins, especially if they have been inadvertently exposed to too much sunlight. Gunnar |
